Lemon Garlic butter beans with bright, lemony flavors are a super quick, 1-pan, 30 minute creamy refreshing recipe. Serve with pasta, or crusty bread or rice for an easy meal.

The garlicky lemon sauce is based on my lemon pasta with plenty of garlic and lemon and simple ingredients. Instead of pasta, you toss in butter beans for a hearty, simple main dish.

This is a vibrant, springy, delicious sauce with amazing flavor and it is pretty flexible. You can change up the flavor by changing up the herbs in the sauce, so feel free to use what you have and what’s seasonal where you are. 

You can also use other beans, like great northern beans, cannellini beans, or chickpeas. This sauce is also great tossed with baked or pan-fried tofu. And, of course, you can use this garlic lemon sauce on cooked pasta if you want, too!

This vegan baklava recipe is made with layers of phyllo dough filled with cinnamon-spiced ground nuts and covered with a sticky lemony syrup! No added refined sugar , No honey needed for this showstopping Middle Eastern dessert!

After all the Baklava inspired recipes I had to make the real deal. Baklava is a decadent and  sweet treat. Traditional baklava is not vegan as it uses butter and honey. I changed it up with some vegan butter and and a sticky lemon syrup made with maple syrup!

This vegan version of baklava is made with layers of sweet filo and chopped nuts, all covered in a sweet syrup! we also add dates to the nut filling since our syrup is not very sweet. We add less sweetener than in traditional baklava recipes. This is a simple yet showstopping dessert guaranteed to impress!

Baklava has many variations and flavors. I use  a blend of nuts and some lemon zest for that decadent and refreshing flavor! If you want, add some rose water to the syrup but be careful as a little goes a long way.

The texture is flaky, soft, buttery, with some added crunch from the crisp filo and nuts. It’s sweet and with a hint of lemon and cinnamon without any flavor being overpowering.

What is phyllo pastry?

Many people are unaware that phyllo dough and filo pastry is actually vegan. There are no eggs or dairy used.

The number of Phyllo sheets needed depends on the size of your pan. I used an 8×8 inch glass pan and needed 24 sheets of that size. The phyllo bundle that  I had had 18 sheets but they were larger sheets and I could cut out of them.

Harissa cauliflower over creamy hummus and drizzled with sweet-and-savory tahini dressing is a show-stopping entree. You can adjust the heat to suit your tastes, so don’t worry if spicy food isn’t your thing.

This is a simple cauliflower, hummus, and tahini combination, is absolutely flavorful. Cauliflower is marinated in harissa and herbs and roasted to perfection, ten served over hummus, topped with tahini sauce and pumpkin seeds. 

You can also make wraps with this caramelized, delicious harissa cauliflower, tahini dressing, and some chopped, crunchy veggies. Add some hummus to the wrap, along with lettuce, cucumbers and onion.

You can either bake the cauliflower or cook it in a skillet. I cooked in a skillet for the video, because I shot this video in summer, and turning on the oven just makes the kitchen too hot. I have both methods listed in the recipe, so you can choose what works best for you.

I use spicy harissa paste, but you can use mild, if you find the heat too much. You can also use harissa spice blend, if you don’t have harissa paste. Just mix the harissa spice with a little bit of lemon juice and two tablespoons of chopped red pepper and use.

Caramelized onion Harissa chickpeas is a super quick, one pan meal with lots of caramelized onions, greens, and chickpeas in a creamy, spicy sauce. Gluten-free soyfree nutfree

Harissa is the flavor base along with a little bit of coconut cream. For the greens, I used chard. You can use spinach, collard greens, amaranth leaves, mustard leaves, or any other leafy greens of choice.

I used chickpeas for the beans here, but this recipe is also great with white beans or butter beans or other beans or lentils. If you don’t like harissa or too much spice, you can change up the flavor profile and use tomato paste instead.

These are super versatile beans and can be served any which way over rice or with naan, flatbread, or crusty bread for dipping. You can even spoon them over baked potatoes!

These roasted root veggie bowls make root vegetables shine! They are loaded with sweet and smoky flavors and exciting textures.  Exactly the kind of healthy, balanced veggie-forward meal I love to make a big batch of. Because guess what,  leftovers taste great the next day making this Mediterranean sheet pan dinner amazing for meal prep.

For this healthy one-pan / sheet pan dinner we roast root veggies, chickpeas, cauliflower, bell pepper and butternut squash along with some balsamic vinegar, maple syrup, olive oil, and a herby spice blend.

While baking, we mix together a zesty refreshing Mediterranean dressing and pour it all over the roasted veggies. I like doing that while the veggies are still warm. Those thirsty roasted root veggies will go ahead absorb all of that lemony goodness right away. But you can also mix veggies and dressing the next day, if you’re meal prepping.

This savory Vegan Spinach Mushroom Tart with homemade pastry is the best thing for breakfast or brunch and you’ll love the combination of spinach and mushrooms! gluten free option

This easy vegan spinach mushroom tart goes well for dinner as well as brunch! Serve this tart with my gravy for special dinners or with my hollandaise sauce for breakfast.

While many vegan savory tart recipes call for pre-made pie crust, I opted to make my savory shortcrust pastry from scratch and I recommend you try it too! The savory pastry comes together within minutes and is just perfect. Rich yet tender, and it holds up well, too.

The shortcrust pastry is made with all purpose  flour, almond flour, and flax eggs Herbs are added for extra flavor. The filling is savory and packed with flavor from sautéed mushrooms,  onions, and spinach.

I like white beans as the base of the filling. You can also use a mix of chickpeas and tofu. The tart is savory and hearty. Add some raisins or cranberries to make it festive. Add more veggies for a hearty weekend brunch.

To get that perfect caramelized browned top, we brush the tart with a mix of vegan Worcestershire sauce and oil and bake at 350 degrees Fahrenheit or 30 to 40 minutes. Don’t have Worcestershire sauce? Use some molasses +soy sauce.

This One Pan everything but the kitchen sink Veggie pasta has umami from Sundried tomatoes, and mushroom, texture from walnuts and loads of vegetables! All made in just 1 pan. Garnish with vegan parm and fresh basil for a comforting weeknight meal!

Is there anything more satisfying on the planet than a plate of penne pasta with a homemade sauce? This vegan veggie pasta recipe is pure Penne Pasta Pleasure.

A true pleasure to make and eat! This is an easy weeknight recipe that is super simple and made with readily available ingredients but tastes so good! I like to put plenty of meaty ingredients and vegetables in the sauce, which makes this hearty dish a bit healthier! It’s pretty much add whatever veggies you have and then cook everything in 1 pan! Make sure to cook the longer cooking veggies for a few minutes before adding sauce and pasta.

Along with the veggies, I added some chopped walnuts which act as a stand-in for veggie crumbles or vegan minced meat. The texture of the chopped nuts combined with their nutty taste makes this dish wonderfully satisfying.

All the tomatoes goodness from Sundried tomatoes and tomato paste and mushrooms give it that umami flavor. Make this comforting pasta tonight. It can be made without nuts and Glutenfree with Glutenfree pasta.

This vegan caramelized onion butternut squash lasagna is a fall-tastic twist on a classic lasagna with layers of creamy roasted butternut squash, spinach, caramelized red onions, and a creamy cashew bechamel. There’s something soul-satisfying about the concept of layering vegan “cheese” sauce and pasta noodles and baking it all in a casserole dish. Don’t you think?

Our vegan bechamel sauce is a tried-and-tested combination of blended tofu and cashews to create that perfect silky creamy texture. Miso paste and nutritional yeast are added for cheesiness. A bit of lemon juice helps to reduce the cashew flavor so it won’t taste like nuts at all. Layers or roasted butternut squash and Caramelized onion adds so much flavor and texture.

This lasagna is the perfect easy fall dinner for a crowd. Leftovers can be refrigerated for up to 4 days or frozen.
