These Smoky Tofu Tacos are a prime example of fusion food – bursting with Tex Mex and Indian flavors and packed with protein and fiber from tofu and black beans, and they are ready in less than 30 minutes! They are my quick go to weeknight meal.

These easy tofu Tacos are here to liven up your Taco Tuesday. This is one of the meals that I put together in a jiffy one night and it was hit! It stuck around for future quick meals.

For the tofu seasoning, I use a combination of Mexican and Indian spices and also add some fenugreek and black pepper which makes the tofu taste just amazing. You can use this tofu in many ways, add to wraps, burrito or as a side or make a naan pizza with it.

Along with a mix of classic fajitas veggies, I went with another Mexican addition: homemade quick refried black beans, which are not only delicious but also add additional protein and fiber. I change these up with different beans or lentils. As well as change up the flavor with Cajun spices or curry powder.

They are a quick grab whatever flavors you like and put them together tacos! Try them!

These tofu tacos are lightly spicy, and packed with protein and fiber, and they are ready in less than 30 minutes. The tofu is pressed before we fry it and gets a wonderfully satisfying pleasing texture.

If you’re not huge on tacos, but like the sound of the filling, you can use the filling in all kinds of ways. Make a burrito or wrap, make tostadas, make a bowl with a side of cilantro lime rice or quinoa. Or make quesadillas!

I have a couple of versions of nacho cheese on the blog . They are nut-free, so I decided to make a nut-based version which is creamier and more decadent. This is a super easy vegan cheese recipe. Just add everything to the blender, and blend until smooth and creamy.

From there, you can adjust the flavors by adding more spices or adjust the tang with lemon juice to make this your own. 

Use this cashew nacho cheese over nachos, burritos, a taco bake, baked potatoes, on blanched broccoli, or however you like. Add some salsa for even more flavor and serve with your fave tortilla chips! For a more neutral cheese sauce recipe see my potato carrot vegan cheese sauce

Don’t you love a burrito bowl? You get amazing textures and flavors of a burrito without having to take the time rolling it up. This one has 1. easy and delicious smoky black beans that are cooked with red lentils to add more texture. 2. These super flavorful chorizo marinade for the tofu! 3. Your fave toppings like chopped onion, jalapeño, vegan cheese or sour cream and hot sauce! Assemble as a bowl or wrap in a burrito!

This is a super comforting bowl, and the spiced bean and lentil mixture is almost stew- or chili-like that cooks up much faster than most chilis or stews. It’s just so hearty and flavorful topped with this delicious, umami-filled, spiced, crisped up tofu. Finish it off with chopped onion or salsa or pickled jalapeño, and any other fillings you’d add to a burrito, and spoon it over rice.

These Jackfruit Tacos are smoky and savory, and vegan taco perfection. It needs just 1 Bowl! The jackfruit is coated in a flavorful marinade, then baked in the oven until perfectly meaty! Then topped with my cheese sauce and salsa for a delicious lunch or snack.

These Jackfruit Tacos are vegan taco perfection!  Jackfruit is perfect for recreating that chewy satisfying shredded meat texture. Coated in a flavorful marinade along with taco  meat spices, then baked in the oven until perfectly meaty it makes for the best vegan taco meat! Everyone will enjoy these, trust me.

Jackfruit can be a hit or miss for many. One reason is that people often get the sweet ripe Jackfruit and that obviously does not work in savory dishes. Get the young green jackfruit can in water or brine. Second reason is the aftertaste of brine in the jackfruit. For that we squeeze out all the brine and then use the jackfruit. I love the jackfruit texture when it’s baked. Baking also bakes out any remaining briny flavor. So try these jackfruit tacos with your favorite spice blends and let me know in the comments how it turned out!

As for the rest of the toppings, you can keep things super simple and just add shredded lettuce and some salsa, or take these to the next level with a generous drizzle of vegan queso or my potato carrot cheese sauce, or vegan mozzarella cream .

These tacos are the perfect meal to serve for a casual dinner party amongst friends.  You can also make the taco meat part of your vegan meal prep routine.

Just double the recipe and use the taco meat as a topping for bowls, and salads, or as a filling for sandwiches, burritos, and wraps.

From there, you pan fry the burritos with a little oil and hot sauce to make them crispy, spicy, and totally addictive.

    Are we ready for an easy yet delish casserole dish? I hope so because I have a good one for you. An easy Vegan Tex Mex Rice Casserole with lots of Tex-mex flavor like chipotle chili and cumin. This is a comforting and not too spicy Mexican-inspired dinner that is perfect on any weekday and leftovers make for a great lunch the next day.

    I make this Tex-Mex rice casserole all the time because it feeds the whole family, is super flavorful, and the ingredients are fairly budget-friendly. It’s kind of one pot dish, but instead of on the stove you put your ingredients into a casserole dish and pop it into the oven.

    Coming at you with some prime vegan fusion food. Vegan Tikka Masala Birria Tacos. Mexican street food with an added Indian twist.

    Traditional birria tacos consist of stewed meat wrapped in tortillas soaked and toasted in broth, served with a side of broth, also known as consomé, for dipping the tacos into. My vegan version uses a savory sauteed veggie filling with mushrooms, peppers and taco  spices.  Instead of the consome, we serve the tacos with a small dish of a quick “mix everything in bowl”, thin tikka masala sauce .

    As with all genius kitchen creations, this dish was born out of a craving. The other day, I was seriously craving some vegan birria tacos but was out of chilies and time, so I fixed myself some fusion Tikka masala birria tacos!

    They turned out so utterly delicious that I just needed to share the recipe with you! Guys, you’ve got to make these ridiculously delicious tacos. This recipe is nut-free and soy free, easily Glutenfree with Glutenfree tortillas.

    Enchiladas are the perfect weeknight dinner food, if you ask me. Tacos might be all the rage but let’s never forget about enchiladas! What’s not to love about soft tortillas that are stuffed, rolled and drenched in red enchilada sauce. Flavor central. This easy recipe for vegan enchiladas features homemade vegan cauliflower taco meat and a quick enchilada sauce – no sautéing! The cauliflower taco meat  all comes together in a food processor!

    Guys you gotta try these unbelievable enchiladas. Tbe enchilada sauce is just mixed in a bowl. No sautéing or blending needed.

    These enchiladas are meat free, dairy free and can be made gluten-free! I skip the cheese sauce for this recipe to keep things lighter. I use my cauliflower walnut taco meat as the base of filling. Add some beans if you like to make it hearty. Then fill, fold, drizzle some enchilada sauce and bake. Top with some fresh tomatoes or avocado or salsa. I use whole wheat tortillas in these but any will work. You can also make it a skillet enchilada by layering tortilla chips, the filling and sauce and some vegan cheese. Bake for 10 mins to melt the cheese.

    Tostada meets quesadilla in these Mexican vegan mushroom pepper tostadillas ! Tortillas baked in the oven until crunchy then filled with a spicy mushroom & bell pepper mix and cheese and baked again to reach crispy melty cheesy vegan tostada perfection.

    If a Mexican version of a veggie and cheese sandwich sounds like your thing you will love these vegan mushroom tostadillas!

    They are like a quesadilla but baked instead of pan-fried – so more like a tostada. But I’ll explain the difference in a second and just call these tostadillas for now. Some might know these under Mexican Pizzas. You can call them whatever you want as long as you try them because these are delish. Admittedly, they are messy to eat! So not the best thing to serve for a first date – but every bite is a heavenly combination of crunchy – toasty and savory- cheesy that will make you fall in love with these double-decker vegan tostadas!

    What are tostadas?

    Tostada is Spanish and means “toasted”so tostada can refer to various Mexican / Latinamerican dishes which are toasted or use a toasted ingredient. But to keep it simple – Mexican tostadas, (in diminutive also called Tostaditas) are typically wheat tortillas that are baked, deep-fried or toasted in a pan until crispy, then topped with whatever you like! Refried beans, grated cheese, chopped avocado and tomato, sliced lettuce, and salsa are the most common toppings.

    For this recipe, we adopt the tostada concept but make our vegan tostadas twice as delicious by adding a second layer of tortilla and cheese on top of the bottom layer and serving it with typical tostadas toppings. So a cross between quesadilla and tostadas.
