This is a super delicious tofu tray bake with tofu and vegetables tossed in a delicious jerk inspired marinade and roasted. Just marinate and spread on a pan and bake! Serve just as-is or in a wrap, over a bed of rice or quinoa, or over salad greens. Easy 1 Pan weeknight meal. Soyfree option

This tray bake dinner is super easy and it’s super flavorful. I make an easy blender marinade with lots of herbs and spices. Then the tofu and veggies are tossed in the marinade, spread on a baking sheet and baked! And that’s it. This tray bake can be served as is or over cooked grains or over a salad, or a wrap. The caramelized herbed veggies and the crisped up flavorful tofu are heavenly.

The marinade is inspired by Jamaican jerk marinade, but I changed it a bit, omitting some of the spices you find in jerk seasoning, like allspice and cinnamon. You can add those for even more flavor.

This goes well with any kind of protein that you’re want to use. If you don’t want to use tofu, just add some chickpeas, chickpea tofu, soaked and drained soy curls, or your favorite vegan chicken substitute. 

You can add more veggies to your tofu tray bake, and you definitely want to double or triple the marinade to keep on hand, so you can toss it in whatever veggies and proteins you want, whether you want to bake or or pan fry them. The marinade is just amazing either which way, so let’s make it!

I love cooking with gochujang, like in my gochujang bowl, peanut gochujang rice, gochujang cauliflower wings, gochujang lentils, and gochujang tofu sandwich. This gochujang chickpea salad is my most recent gochujang recipe.

I’ve got a bunch of chickpea salad sandwiches on the blog, because there isn’t just one way to make a chickpea salad sandwich. You can add a lot of different spices, herbs, flavors, sauces, and crunchy additions to make super quick lunches that are unique every single time! In this salad, we have creamy dressing with spicy gochujang, paired with caramelized onions that have been cooked with gochujang! Making them sweeter and spiced and gorgeous. You can use these onions in so many ways, on burgers, wraps, bowls and more.

For this chickpea salad sandwich, we add gochujang into the creamy dressing for the chickpea salad. We also caramelize the onions. Once the onions are halfway cooked, we add some gochujang to them, as well, so you get these sweet-and-spicy, delicious onions to top the chickpea salad sandwich. Serve it in a bread or pita sandwich or in a wrap or lettuce wrap or as a dip with tortilla chips or pita chips!

Need lunch or dinner in a hurry? These easy chickpea wraps are the answer! I give you three amazing ways to make these 20 Min wraps: berbere, buffalo cajun, and lemon pepper!

When I’m having a busy day, I just get out a can of chickpeas, add some spices or sauces with or without some aromatics , sauté and then add them to either tacos or wraps. I make some crunchy topping or some salad to go with it. Sometimes I’ll add some cooked greens or grains! These are super versatile and perfect for 20 min weeknight meals.

Chickpeas with Buffalo sauce + Cajun spice topped with crunchy celery and vegan ranch, chickpeas sautéed with onion and Ethiopian berbere spice, topped with tomato and onion, and Chickpeas sautéed with my lemon pepper sauce and served with cabbage or lettuce. You can serve these in wraps, in sandwiches, too a salad or grain bowl and what not!
These are some of my favorite ways to make a quick lunch or dinner. My husband just loves the Berbere chickpea wraps.

These crispy tofu burritos are a super flavorful burrito that’s packed with textures and flavors! Make the delicious savory tofu-mushroom filling, and spicy potatoes, then add to the tortillas along with fresh cilantro and veggies. Roll them all up into a burrito.

From there, you pan fry the burritos with a little oil and hot sauce to make them crispy, spicy, and totally addictive.

This is a bean-free burrito, but you can add beans if you like. You can also serve the flavorful fillings as tacos, wraps, taquitos or quesadillas.

Easy meal combinations come from days i fix meals in a hurry. These are super simple wraps made with four-ingredient buffalo cajun soy curls are super delicious. Cajun seasoning with Buffalo sauce is a match you have to try. Use your favorite Cajun blend or make cajun spice.

I use a store-bought vegan buffalo sauce, but you can also make your own.  

This recipe is versatile! You can use other types of vegan protein, like seitan or shredded tofu or other vegan chicken substitutes, if you don’t want to use soy curls.

These easy Chickpea Kathi Rolls filled with Indian spiced chickpeas and fresh cilantro mint chutney are the perfect easy lunch or weeknight dinner! Nutfree Soyfree Oilfree Gluten-free option

For an easy lunch or weeknight dinner or a mid meal snack, look no further than these chickpea wraps! Kathi rolls are a popular wrap that originated in eastern India. It originally was made with kebabs but got adapted all over the country for variations witb fillings and styles. One of the popular snack stalls around our neighborhood in India had all these veggie kathi rolls with options like brown chickpeas, veggies, Paneer cheese, soya chaap(vegan meat) and more. Some of those were simple wraps put together with a warmed fresh Paratha or thick roti, quick spiced up chickpeas or paneer and topped with tomato onion or cucumber tossed with a fresh cilantro mint chutney and sprinkled with chaat masala or garam masala. They flavors and textures together were fantastic!

For todays versions I made these with white chickpeas as they are easily available. But if you have access to brown chickpeas, try these with some cooked brown chickpeas(desi chickpeas- kala chana)!

They are savory, spicy, hearty and there is  crunch from added lettuce and veggies. I like the tender chew you get from the chickpeas and the Indian spice mix we simmer the chickpeas in take these wraps to the next level.

With a short prep time of under 20 minutes, this is a quick, protein- and fiber-filled meal to go that is perfect any day of the week.

The chickpeas are flavored with Chaat masala, a tangy and sweet Indian spice blend that you can get in your Indian store or online.It’s spelled as C-H-A-A-T.

You can also make this recipe with cooked brown chickpeas white chickpeas or any other beans of choice. If you want, add in some cooked potato cubes as well to make this extra substantial . To add some sweetness to this all-over quite savory wrap, add some mango chutney or date tamarind chutney.

You can use gluten-free wraps or serve this in lettuce leaves for gluten-free or if you want to cut down on the carbs. This recipe is nut free as is. You’ve got to try these Chana Kathi rolls!

Taco Tuesday just got a lot better! These Blackened Tofu Tacos are the BOMB! Thanks to a generous coating of spices like paprika or cumin, the tofu gets a nice golden crust that’s packed with smoky flavor. Pair that with some crunchy veg, vegan sour cream and sweet and spicy caramelized bbq onions and you’ve got a real good taco on your hands.

I’m telling you, if you’ve never tried blackened tofu, forget everything you thought you know about tofu and give these blackened tofu tacos a try! Feel free to play with the spices to suit your personal preferences, such as adding some cayenne pepper if you want some heat!

You can serve these as burritos or too a seasonal salad with the blackened tofu and bbq onions. So much texture and flavor and works well in any format

Red Lentil Hummus Wraps with Aloo Gobi & Pickled Onions

Time for another delicious vegan wrap filled with a classic Indian dish – Aloo Gobi. 

If you don’t like to eat a big Indian meal, all spread out on one big plate with a flatbread, breaking a flatbread into pieces using your hand. picking up the dry veggie side with the flatbread and dipping it in the lentil dal or other soups/stews etc. Well, then you can put everything into a wrap 🙂

This vegan hummus wrap. Make it! It is filled with my Dad’s delicious Gobi Aloo Mutter (Indian Cauliflower Potato Stir-fry), some thick red lentil hummus – Masoor Dal, fresh cilantro and pickled onions.

Serve with some cilantro chutney or Sriracha. Everything that can go on a Thali(plate), can go into this hummus wrap! I used red/pink/orange lentils for this hummus wrap since they cook really quickly.

You can use any lentil or bean really. Just add some spices, cook and mash them up and use as a hummus base. Any Indian spiced Daal cooked with less water can be made into hummus. We should all eat more lentils:)

Summer meals are often are simplified versions of some Indian spreads that can be served in hand held form, like wraps, tacos, burritos, burgers etc. These tikka wraps fall perfectly there. The Veggie Tikka or Kebabs that would usually be skewered and grilled, are all put on one baking sheet to bake to crisp. The medley is then served over warm rotis or tortillas dressed in coconut chutney.

This Coconut chutney is easy and addictive. You will want to put it over tacos, burgers and everything. Use seasonal vegetables of choice. Add some hearty greens to marinate and bake/grill. Serve these in tortillas or make a bowl with a generous drizzle of the coconut dressing. Don’t like coconut, use my Mint Cilantro Chutney instead. Make a huge helping of these tikka veggies as the marinade is super flavorful. It’s a super quick Sheet Pan Roasted Veggies + Chickpeas Dinner! Add the baked veggies to any other bowls, over salad, grill into sandwiches, and more this Summer.
