If you’re new to gluten-free baking, these tips will help you achieve the best results!

  • Sometimes you can replace all-purpose flour with gluten-free and call it a day, but if you’re not sure, you’re better off starting with a baking recipe that’s gluten-free as-is.
  • Gluten-free baked goods can end up dense. Replacing about ยผ of the liquid — like soy milk or water — with club soda can help give back some of that lightness.
  • A lot of my vegan, gluten-free baking recipes use almond flour. When you’re mixing in almond flour, press out as many lumps as you can before adding liquid. It will be much harder to get rid of almond flour lumps after adding the liquid!
  • Gluten helps bind baked goods together, so using some kind of starch to replace it helps a lot. Corn starch, tapioca starch, potato starch, arrowroot etc.
