These Smoky Tofu Tacos are a prime example of fusion food – bursting with Tex Mex and Indian flavors and packed with protein and fiber from tofu and black beans, and they are ready in less than 30 minutes! They are my quick go to weeknight meal.

These easy tofu Tacos are here to liven up your Taco Tuesday. This is one of the meals that I put together in a jiffy one night and it was hit! It stuck around for future quick meals.

For the tofu seasoning, I use a combination of Mexican and Indian spices and also add some fenugreek and black pepper which makes the tofu taste just amazing. You can use this tofu in many ways, add to wraps, burrito or as a side or make a naan pizza with it.

Along with a mix of classic fajitas veggies, I went with another Mexican addition: homemade quick refried black beans, which are not only delicious but also add additional protein and fiber. I change these up with different beans or lentils. As well as change up the flavor with Cajun spices or curry powder.

They are a quick grab whatever flavors you like and put them together tacos! Try them!

These tofu tacos are lightly spicy, and packed with protein and fiber, and they are ready in less than 30 minutes. The tofu is pressed before we fry it and gets a wonderfully satisfying pleasing texture.

If you’re not huge on tacos, but like the sound of the filling, you can use the filling in all kinds of ways. Make a burrito or wrap, make tostadas, make a bowl with a side of cilantro lime rice or quinoa. Or make quesadillas!

Tajin roasted carrots over shredded tofu is delicious vegan lunch recipe that you are going to LOVE! Cilantro lime shredded tofu pairs perfectly with Tajin roasted carrots on bread or topped with nuts or seeds for an easy bowl meal.

Shredding pressed, extra firm tofu gives it a unique, meaty texture that’s great for filling sandwiches, wraps, bowls, and more. Shredding also increases the tofu’s surface area, which allows it to take on even more flavor from the amazing cilantro lime marinade. I pair it with these easy flavor packed Roasted carrots that you can serve up as a bowl topped with seeds and fresh herbs.

If you don’t want to use tofu, you can use cooked rice instead for a delicious bowl meal!

I’m using tajin in this recipe to season both the tofu and the roasted carrots. Tajin gives this nice tang to the overall flavor profile. If you don’t like that much tang from the tajin, you can use Cajun spice or a different spice blend, like chili powder, curry powder, Jamaican curry powder, or whatever spice mix you like.

The carrots for this recipe have been cut into a diagonal shape to give them more surface area for roasting. And they pair so well with the tangy, shredded tofu! You can serve this dish in many different ways. I love how versatile this pairing is.

To make the shredded tofu into a bowl meal, serve it  with a sprinkle of sesame seeds and hemp seeds or top with chopped walnuts or pecans. For the sandwich version, just pile the carrots and the shredded tofu onto your bread of choice, add some a creamy dip or some hummus to the bread, and it makes an absolutely delicious brunch or lunch. You can also add these to a wrap or lettuce wrap and top with some lime juice, cilantro, and more seeds.

No matter how you serve this flavor-packed cilantro lime shredded tofu, you are going to just love it!

These crispy tofu burritos are a super flavorful burrito that’s packed with textures and flavors! Make the delicious savory tofu-mushroom filling, and spicy potatoes, then add to the tortillas along with fresh cilantro and veggies. Roll them all up into a burrito.

From there, you pan fry the burritos with a little oil and hot sauce to make them crispy, spicy, and totally addictive.

Here’s the vegan party snack to beat all party snacks! Vegan French Onion Dip – lovers of my vegan French Onion Soup will LOVE this dip made with homemade caramelized onions.

Now, caramelizing onions can be incredibly tedious and requires watching the pan for half an hour. In this Instant Pot French Onion Dip recipe, the caramelization part is completely hands-off! We let the onions slowly caramelize in your Instant Pot.  And the best thing – there’s zero risk of burnt onions in the end. You can make the caramelized onion on stove top or bake them. See recipe notes for instructions.

This restaurant-style dip pairs perfectly with fresh veggie sticks, breadsticks, or your favorite homemade or store-bought crackers for easy entertaining.

Using my fool-proof method, the onions will cook at low heat and caramelize and get perfectly jammy and delicious! If you love how these turn out and want to use these for more recipes than just French Onion Dip, you can use these over hummus/ avodado toast or cream cheese toasts, add them to top your favorite pasta, etc.

French onion dips usually require cream cheese and/or yogurt as a base. In this vegan version, we blitz tofu with dairy-free yogurt.

The best Vegan Cheese Sauce made with veggies in the Instant Pot! It’s perfect for making classic mac and cheese but also tastes amazing with veggies, rice, or as a base for dairy-free cheese dips or use over nachos or baked potato! Gluten-free & nut-free option. Stovetop instructions as well.

Here’s an amazing Vegan Cheese Sauce that is super smooth, very creamy, and irresistibly cheesy. The best part? It’s all made in the Instant Pot so pretty hands-off! It tasted just like the real deal and your guests won’t believe it’s vegan!

Now, I already have this Vegan Queso recipe in the archive but while the queso recip0e is ideal as a dip or for nachos, this is more of an all-purpose cheese sauce. It’s brilliant drizzled over veggies and obviously utterly divine with pasta. Actually, it goes so well with pasta ! I added a Mac cheese recipe to the recipe card.

The recipe starts off with some creamy vegetables like cauliflower or zucchini, carrots, and potatoes. Cashews add more creaminess,  and we also add in some spices like ground mustard, garlic, and onion powder for flavor. Then two important ingredients – miso paste and nutritional yeast! These two additions add the umami so don’t skip them.

Nutritional yeast has nothing to do with the active dry yeast that you buy for baking. It’s deactivated yeast and you can find it online at amazon but also at grocery stores. Adding nutritional yeast to dips and sauces lends them a cheesy flavor that you will find to be very addictive.

On to the method: This vegan cheese sauce recipe is so quick and simple to make using the Instant Pot. Simply dump everything together in the pot, cook it on high pressure and then puree it in a blender into a smooth creamy sauce. DONE!

I love to use this cheese sauce for Mac and cheese, over tacos, in deep dish cheesy pizzas or pastries. It’s versatile and so delicious!

Trouble getting out of bed in the morning? These savory delicious quesadillas are what will wake you up in the morning. Crispy golden tortillas filled with smoky vegan potatoes (oh my gosh, make these pronto) and pan-fried tofu as well as hummus. We add some Indian sulfur salt to the hummus to give it an eggy taste because it’s a breakfast quesadilla after all, right?

This is an amazing quesadilla recipe that you can make ahead of time. Just prep the fillings beforehand then assemble and grill the quesadilla or make a sandwich and serve!

Oh, and do try to save the potatoes for the quesadilla. They are highly addictive with that smoky flavor and that savory seasoning! You can serve these on the side with other breakfast as well such as vegan omelets or quiche or scramble or savory waffles

Enchiladas are the perfect weeknight dinner food, if you ask me. Tacos might be all the rage but let’s never forget about enchiladas! What’s not to love about soft tortillas that are stuffed, rolled and drenched in red enchilada sauce. Flavor central. This easy recipe for vegan enchiladas features homemade vegan cauliflower taco meat and a quick enchilada sauce – no sautéing! The cauliflower taco meat  all comes together in a food processor!

Guys you gotta try these unbelievable enchiladas. Tbe enchilada sauce is just mixed in a bowl. No sautéing or blending needed.

These enchiladas are meat free, dairy free and can be made gluten-free! I skip the cheese sauce for this recipe to keep things lighter. I use my cauliflower walnut taco meat as the base of filling. Add some beans if you like to make it hearty. Then fill, fold, drizzle some enchilada sauce and bake. Top with some fresh tomatoes or avocado or salsa. I use whole wheat tortillas in these but any will work. You can also make it a skillet enchilada by layering tortilla chips, the filling and sauce and some vegan cheese. Bake for 10 mins to melt the cheese.

Now that the days are getting warmer, I love me a  quick, easy, and tasty one-pan dinner that allows me to stay outside longer. And this one is seriously easy.  Traditionally, Japaneño Poppers are a bit fiddly to make, First hollowed out, then stuffed with a mixture of cheese and sometimes ground meat before they are breaded and deep-fried. This skillet dinner is more like a deconstructed cheater’s version. We take those cheesy briney flavors we love and incorporate them into a delicious Mexican-inspired tortilla skillet.

A simple hearty mix of sauteed onion, tomato and bell peppers with added veggie crumbles and some pickled jalapeno is the base of this Tex Mex Skillet dinner. No breadcrumbs needed here! I went with some sliced tortillas that get tossed with the jalapeno popper filling directly in the pan. Cheese and jalapeno popper sauce on top, and DONE! No fussing, no stuffing no breading or frying involved. WIN!

You can serve this Vegan Jalapeño Popper Skillet Dinner with some tortilla chips, over rice or cauliflower rice,  with a salad or just straight out of the pan. The most important thing is drizzling it again all over with a generous amount of vegan Jalapeno Popper Cream for a bit of tang.
