I love crispy pinwheels as appetizers for parties or any get-together. They’re such a satisfying, handheld snack that’s quick to pick up and not too messy. And you can add whatever fillings you like to pinwheels, like the veggie filling in my spinach pinwheels, spiced lentils in my kachori pinwheels, or spiced potatoes in my samosa pinwheels

And today, we are making jalapeño popper pinwheels, which have a mix of pickled and fresh jalapeños along with non-dairy cream cheese, rolled into puff pastry sheets and topped with crispy breadcrumb and cheese mixture. This amazing appetizer is basically jalapeño popper dip rolled up in a crispy puff pastry sheet!! It’s spicy, creamy, cheesy, crispy and just addictive. They need few ingredients, and are also easy to make ahead.

Vegan Caprese-inspired stacks are like warm, cozy version of a vegan tofu Caprese. Instead of serving it cold, you bake these tofu tomato towers in the oven with a cheesy garlic basil breadcrumb topping. They are absolutely delicious!

This comforting dish features seasoned tofu topped with juicy fresh tomatoes and a garlic-cheese-breadcrumb topping. It’s the best way to use really good tomatoes, like heirloom or beefsteak tomatoes, which are super juicy and delicious. This is a great summer dish, and it works really well for the holidays, too!

Just slice up your tomatoes, then use a cookie cutter to cut the tofu into similar-sized rounds, as well, for a good presentation.

If you don’t want to cut the tofu into rounds, you can just slice it up and arrange the tomatoes on top of the tofu rectangles in the baking pan. Do as you like, and then make this delicious herb-garlic-breadcrumb-cheese mixture that you put on top along with a little bit of olive oil to help crisp everything up.

Then bake it. It’s as simple as that! 

This vegan Caprese salad-inspired casserole bakes into this very delicious dish that you will remember for a long long time. It is a great side dish, or you can make it a meal by serving it with some creamy pasta or some sourdough or bakery bread.

There is something about the flavor combination lemon-coconut that just takes me to a happy, sunshiney place! These delectable lemon coconut bites are a perfect summer snack! And the best part? They are super easy! While many energy bites require us to grind toasted nuts, or use food processor etc we skip all that by using nut flours that already come ground finely. In our case almond flour and coconut flour. Just add everything to a bowl, mix and shape!

I love how the almond flour gives these an almost marzipan-like texture. Lemon juice and zest are added for that fresh zing while maple syrup lends these the perfect sweetness.

This vegan baklava recipe is made with layers of phyllo dough filled with cinnamon-spiced ground nuts and covered with a sticky lemony syrup! No added refined sugar , No honey needed for this showstopping Middle Eastern dessert!

After all the Baklava inspired recipes I had to make the real deal. Baklava is a decadent and  sweet treat. Traditional baklava is not vegan as it uses butter and honey. I changed it up with some vegan butter and and a sticky lemon syrup made with maple syrup!

This vegan version of baklava is made with layers of sweet filo and chopped nuts, all covered in a sweet syrup! we also add dates to the nut filling since our syrup is not very sweet. We add less sweetener than in traditional baklava recipes. This is a simple yet showstopping dessert guaranteed to impress!

Baklava has many variations and flavors. I use  a blend of nuts and some lemon zest for that decadent and refreshing flavor! If you want, add some rose water to the syrup but be careful as a little goes a long way.

The texture is flaky, soft, buttery, with some added crunch from the crisp filo and nuts. It’s sweet and with a hint of lemon and cinnamon without any flavor being overpowering.

What is phyllo pastry?

Many people are unaware that phyllo dough and filo pastry is actually vegan. There are no eggs or dairy used.

The number of Phyllo sheets needed depends on the size of your pan. I used an 8×8 inch glass pan and needed 24 sheets of that size. The phyllo bundle that  I had had 18 sheets but they were larger sheets and I could cut out of them.

These crispy popped lentils with smooth mashed potatoes are full of amazing texture and flavor!

If you’ve never made popped lentils before, they are so much fun! Add cooked lentils and a little bit of oil to a skillet, cook them over high heat until they fluff up and pop like a popped grain, and then they crisp up a little bit. Then, we add some savory and smoky spices to flavor them.

Then we try not to eat these delicious lentils all by themselves! And serve them over some creamy mashed potatoes. I served these as topping over a simple cauliflower potato mash flavored with herbs and paprika. You can use all potato or all cauliflower. These bowls make for an amazing holiday or even weeknight side dish!

These popped roasted lentils are very versatile. Add whatever herbs or spices you like and add them to your salads, bowls, tacos, pasta and everything! Think spicy Cajun lentils, Jamaican curry lentils and more.

Serve these with a side salad or rustic bread, or some gravy and biscuits, or as a side in a spread

Soothing mushroom noodle soup is an easy, one-pot comfort food dinner. This is a brothy noodle soup with tender, wide rice noodles and hearty mushrooms. Glutenfree 1 pot 30 minute

I love using rice noodles to make noodle soups and love them for skillet noodles, as well, like my Thai skillet noodles. I took elements of that along with my other brothy soups and some of the flavor profile from comforting chicken noodle soups to make this umami-filled really delicious soup broth!
This is a simple 1 pot soup. We cook the noodles by boiling them in the soup broth itself. That means no need to pre-cook the noodles!

This mushroom noodle soup is packed with mushrooms, carrots, and celery. You can add other veggies to it, if you like. You can also add more protein, like vegan sausage or veggie grounds or tvp.

Pad Thai noodles will work in place of the wide rice noodles in this soup. In fact, any kind of rice noodles would work. You can also use pasta. The cooking time will vary based on the noodles that you use.

This soup is best when it’s hot, with the broth really hot and soothing. It’s great for winter and spring, too. I love to sear some mushroom or tofu with salt and pepper and use that to top the soup. That and Garnishes like green onion add a vibrant flavor and texture. You can break the noodles into shorter size before adding them to the pan to cook so that the soup is easier to eat (tip from husband who doesn’t like to slurp long noodles :))

This is a super moist and super spiced vegan gingerbread cake with triple ginger: fresh, dried, and candied.

It is made in just one bowl using everyday ingredients. You can add other ingredients into the batter, like chopped pecans or walnuts, candied ginger, or raisins. You can also add in some fresh grated ginger for even more gingery flavor in the cake! 

I make this amazing ginger glaze topping for the cake with fresh ginger, brown sugar, and candied ginger, and it takes the spice of the cake to an amazing level! The cake is super moist, super spice, and perfect with a cup of masala chai or coffee or gingerbread latte!

This ginger molasses cake has both candied ginger and fresh ginger as well as that amazing ginger topping in addition to fall spices and a deep flavor of molasses. All the flavors get stronger as the cake sits. You can omit a form of ginger or reduce some to taste preference.

Add other nuts or seeds of choice, chocolate chips, or dried fruit, if you like. The more the merrier when it comes to this vegan gingerbread cake!

This is a super easy but very delicious tofu schnitzel recipe with an amazing, crispy coating on flavorful, marinated tofu, is a perfect weeknight meal! The key is double coating! Nutfree, with gluten-free and soyfree options

We press the tofu and then make a flavorful marinade. Then, we make a quick, one bowl batter. We put the marinated tofu in the batter, and then coat it with breadcrumbs and repeat for another coating then pan fry. 

The results are so super crispy, you are going to just love it.

You can also bake this tofu schnitzel and then serve it with some lemon slices and a sauce of choice, or with some gravy like my simple one pan gravy or my mushroom gravy.  Or serve over salad or over creamy pasta. It is super versatile! You can also make them into sandwiches by using bread or burger buns and layering them with greens or lettuce, vegan mayo, and other toppings of choice.

The key to the crust sticking to the tofu and staying crisp is doubling the coating! The batter sticks really well and makes a really delicious, crispy crust. It basically tastes like a crispy fried chicken patty!!

This is a super easy gravy that I make with mushrooms and onions. Sometimes I make it just with mushrooms, and depending on what I’m planning to serve it with, I will usually add either shallots or sliced pearl onions to the gravy.
